vergenWhat is your idea of a perfect restaurant?
There’s no such thing...we are all sinners!

What is your greatest fear at work?
Staff injuries. Kitchens are a real work environment with real dangers... we all have suffered the cuts and burns, but it’s the big ones that could put a cook out for good that keep me up at night.

Which working Chef do you most admire?
Anthony Walsh, he has his own Instagram hashtag!

What part of work ‘you’ do you most deplore in yourself?
Meetings.... I find 80% of the time they eat up a good chunk of the day!

What would instantly make you fire someone?
Stealing from their co-workers.

What was your most extravagant purchase for your restaurant?
Fancy new hood system with sensors ... $120,000.00!

What is your favorite food journey?
Anytime that I get to go hunting!! #miseenplace #BANGBANG

What words or phrases do you most overuse at work?
F***, Rustic, & Sexy.

What do you regret most after all your years in the business?
Nothing, I’ve had a pretty wicked path!

What do you love most about this industry?
The interesting text messages from interesting industry professionals!

What is your current state of mind?
Adult rated.

If you could change anything about the restaurant industry where you are, what would it be?
More money in the pockets of guest to get out more often or be able to support local producers!

What do you consider your most essential ingredient?
I hope no one says Love... imagine having the chef put their Love in your soup? Think about it...Kinda gross!

The work/life balance struggle is real. How good of a juggler are you?
Tips?

Better after I came to the realization that I could have lost my whole family in a house fire! Plan and schedule for life, and things that you love.... if you don’t you’ll be on your deathbed with a life’s worth of regrets and I guarantee you will not look back wishing you had worked more hours!

What is your most treasured kitchen tool?
My hands!

What do you regard as the lowest depth of misery?
Passive aggressive control over dining companions by using their dietary needs or choices.

When you finally retire, were will you live?
....preferably on a large boat!

What is your most marked characteristic?
My beautiful eyes 8-)

What is the quality you most like in a chef?
Problem solving skills!

What is your greatest inspiration/motivation?
My kids !

Superman or Spiderman?
I’ll go with the laser eyes!

What is the first thing you remember cooking?
Squirrel on the BBQ on the deck, my mother wouldn't let me bring it in the house!

Beck or Clapton?
Sounds like a Superbowl half time collaboration!

You have to cook Escoffier’s death row meal. Menu?
Wood fired BBQ pork and wonder bread!

Favourite kitchen word or phrase?
“Just like grandma used to make!”
