It's true that salads get a bad rap. But, it's also true that salads aren't boring. In fact, they have the potential to be delicious, innovative and creative, all at the same time (not to mention, delicious!). So, what makes a good salad? It's obviously more than just some greens and a pool of salad dressing to mask the taste - it could be made with seafood or even sausage (crazy, right?)! We're at a point in cooking where we can be bold as chefs and create interesting and different dishes. Salads are a surefire and underused menu item.
